Ingredients

Method

  1. Melt the butter over a low heat in a medium saucepan. Add the pecans and cook for about 3 minutes, until they turn a deep brown and smell toasty and nutty.
  2. Drain the pecans thoroughly through a sieve over a small bowl. Keep the melted butter and store the pecans in an airtight container if not using them straight away.
  3. Return the butter to the saucepan and add the almond milk, almond cream, sugar, cornflour and salt. Stir over a medium heat until the sugar has dissolved and the mixture starts to bubble. Turn the heat down and simmer for 1–2 minutes, whisking constantly, until it thickens slightly.
  4. Take off the heat and stir in the vanilla. Pour the mixture into the pint and stand it in an ice bath. Once cool, put the lid on and freeze for 24 hours.
  5. Press: ICE CREAM Take the pint out of the freezer, remove the lid, lock it into the outer bowl with the paddle lid, place it on the machine and select ice cream.
  6. Press: MIX-IN Make a hole about 5 cm wide down to the bottom of the pint. Add the toasted pecans to the hole and spin again on the mix-in program.
  7. Serve straight away.

We add up the nutrition in each ingredient, using standard food data from the US Department of Agriculture's FoodData Central (and typical packet values where it has no match, such as UK double cream), then divide by the 4 servings this recipe makes. Brands vary, so treat it as a guide. Optional extras and the liquid you top up with before spinning aren't counted.
