Ingredients

Method

  1. Put the whole milk, 1¼ cups of crushed digestive biscuits and the salt in a large bowl. Stir to submerge the biscuit crumbs and leave for 20 minutes so the milk takes on their flavour.
  2. Put the egg yolks and agave nectar in a medium saucepan. Whisk until fully combined.
  3. Strain the biscuit crumbs out of the milk through a fine sieve over the saucepan. Press the crumbs into the sieve with a spoon to release the milk they've soaked up. Add the double cream and whisk.
  4. Heat over a medium heat, stirring constantly with a whisk. Cook until it reaches 74–79°C on a thermometer.
  5. Take off the heat and strain through a clean fine sieve into an empty Creami pint. The base may not reach the max fill line. Stand the pint in an ice bath until cool. Once cool, cover and freeze for 24 hours.
  6. Press: ICE CREAM Take the pint out of the freezer, remove the lid, lock it into the outer bowl with the paddle lid, place it on the machine and select ice cream.
  7. Press: MIX-IN Make a hole about 4 cm wide down to the bottom of the pint. Add the remaining crushed digestive biscuits to the hole and spin again on the mix-in program.
  8. Serve straight away.

We add up the nutrition in each ingredient, using standard food data from the US Department of Agriculture's FoodData Central (and typical packet values where it has no match, such as UK double cream), then divide by the 4 servings this recipe makes. Brands vary, so treat it as a guide. Optional extras and the liquid you top up with before spinning aren't counted.
