Ingredients

Method

  1. Heat the cream, milk, mixed spice and orange zest in a medium saucepan over a low heat, stirring now and then with a silicone spatula, until it just comes to a simmer.
  2. Whisk the sugar, cornflour and egg yolks together in a large bowl until pale.
  3. Whisking all the time, pour a quarter of the cream mixture into the eggs. Once combined, pour in the rest of the cream mixture and whisk again.
  4. Pour back into the saucepan and cook over a low heat for 6–8 minutes, whisking constantly, until it coats the back of a spoon and is as thick as double cream, or reaches 74–79°C on a thermometer.
  5. Take off the heat and strain through a sieve into the bowl. Cover the surface with cling film and leave to cool completely.
  6. Once cool, remove the cling film. Pour the base into the pint. Put the lid on and freeze for 24 hours.
  7. Press: GELATO Take the pint out of the freezer, remove the lid, lock it into the outer bowl with the paddle lid, place it on the machine and select gelato.
  8. Press: MIX-IN Make a hole about 4 cm wide down to the bottom of the pint. Add the raisins and chopped mixed peel to the hole and spin again on the mix-in program.
  9. Serve straight away.

We add up the nutrition in each ingredient, using standard food data from the US Department of Agriculture's FoodData Central (and typical packet values where it has no match, such as UK double cream), then divide by the 4 servings this recipe makes. Brands vary, so treat it as a guide. Optional extras and the liquid you top up with before spinning aren't counted.
